A few weeks ago, I had a delicious spiced mango muffin at a vegan cafe. It was heavenly and I decided to recreate the recipe at home, but with one more taste. I thought coconut would be a good compliment to the mango, and chose the bigger flakes instead of the shredded coconut I usually buy, for the texture.  I’m really pleased with how good these turned out!

Spiced Coconut Mango Muffins
1 cup large flaked coconut
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat pastry flour
3/4 cup packed demerara (unrefined) brown sugar
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (I like roasted Saigon cinnamon)
1/2 tsp cardamom
1/4 tsp nutmeg
2/3 cup canola oil
1 tsp vanilla extract
3/4 cup coconut milk
Ener-G (or other brand) egg replacer for two eggs
one large mango, chopped, (about 1 1/2 cups)

Place the coconut flakes in a bowl and add just enough warm water to just cover the coconut.  Let sit for five minutes to rehydrate the flakes a bit.  Mix the egg replacer with water as per package instructions, let sit for five minutes, the stir again.  In a large bowl, combine flours, sugar, baking powder, baking soda, spices and salt.  In a food processor, combine the oil, coconut milk, vanilla extract and egg replacer.  Slowly add the wet ingredients into the bowl with the dry ingredients, stirring for a few moments, until the flour mixture is wet but ingredients not thoroughly combined (over-mixing makes for tough muffins).  Drain the coconut and add it to muffin mixture along with the mango.  Stir gently and spoon into muffin cups.  Sprinkle the tops with cinnamon.

Bake muffins at 400 degrees for about 20 minutes.  Let sit for 10 minutes before removing from the muffin cups.

BTW, how cute are these silicone muffin cups? I found them at Ikea and love that they are a great eco-friendly alternative to using disposable paper cups, they are dishwasher safe and the muffins pop out cleanly and easily.  They come in different colours, so in our house, muffins in the brown cups mean the muffins have nuts in them and my son knows not to take them to school.

These muffins were awesome with strawberry jam!
