Swimming pool. BBQ. Bike rides. Popsicles. Reading a good book in the sun.
Making the most of the last long weekend of summer = Check!
Here’s my recipe for homemade popsicles, no added sugar.
Smoothie Popsicles
1 cup juice
1 banana
1 cup non-dairy milk (I used coconut milk beverage)
1/2 tsp cinnamon
Combine all ingredients in a blender or food processor, pour into popsicle molds and enjoy when frozen. Makes six popsicles.
How did you spend the Labour Day long weekend?
Mmm those look great! Can’t wait to try ‘em out.
Well, Terry’s been sick with a cold so not a whole lot going on this weekend, but I did manage to coax him into a drive into Santa Cruz for dinner at Café Gratitude to celebrate my 3-year anniversary as a vegan =)
I’ve read the Cafe Gratitude cookbook, it looks like a lovely place! Hope your Terry is better soon.
Yum! I love popsicles but don’t have a mold. That’s on the list for next summer for sure!
You can find the molds pretty much anywhere in summer. We found them in the grocery store. Fun way to have a smoothie for breakfast on a hot day!
